"This creation is inspired by my love of bright, tropical flavours and the first time I tasted exotic fruits. To me, the pairing of mango and passionfruit feels like sunshine.
A chunky mango compote is layered with a punchy passionfruit and mango crème, rich, smooth, and irresistibly exotic. We use a blend of two mango varieties, Alphonso and Kesar, grown in western India, hand-harvested and finished ripening under straw to develop their full aroma. Carefully selected passionfruit from Ecuador, Peru, or Madagascar adds juicy, vibrant tropical notes that lift the dessert.
